What I like about this recipe is that it is VERSATILE!! You can substitute anything for what you have on hand. I tested the ease of this recipe last night. I have class late, so I need dinner prep and execution to be easy. It was super easy. Also, I had found these cool Japanese noodles that were different than what recipe calls for and that worked. I really feel like you can omit curry if you are not a fan or substitute something else for the vegetables if you want. I made this one other time and added chicken. I love things that can be vegetarian or you can easily add a protein of choice.

I am including this in the “bonafide lunches” because it passes the “family” and “bro’ friendly” tests. It also passes the “I live cross culturally and don’t have access to all the usual ingredients” test. Enjoy!
